Tofu Stir Fry recipe with Ginger Sauce

1 block extra firm tofu
2 tablespoons olive oil, divided
1 cup uncooked rice
12-ounce package frozen stir fry vegetables
Optional garnish: sesame seeds, green onion

Soy Nut Butter Ginger Sauce Ingredients

¼ cup soy nut butter
2 tablespoons soy sauce
2 tablespoons water
5 tablespoons maple syrup
1 teaspoon sesame oil
1 teaspoon ground ginger

Directions

To prepare the tofu, remove it from its package and drain all the water. Sandwich the tofu between two paper towels and two plates. Place a heavy item like a can on the top plate and press for at least 30 minutes. Cut the pressed tofu horizontally into three slabs, then cut into bite size cubes.

In a small bowl, combine the soy nut butter, soy sauce, water, maple syrup, sesame oil and ginger. Stir until completely smooth. (The sauce can be stored in the refrigerator for up to 14 days.)

Follow the package instructions to prepare the rice.

To cook the stir fry, heat oil in a large pan over medium heat. Add the vegetables and cook, stirring occasionally for five to seven minutes, until tender and crisp. Transfer the vegetables to a clean plate. Add one to two tablespoons of oil to the pan and add the tofu. Cook for 10 to 15 minutes, turning as needed, until the tofu is golden and crispy. Pour the sauce evenly over the tofu. Toss and heat sauce through for one to two minutes. Remove the pan from heat so the sauce doesn’t over-reduce. Enjoy the tofu with plenty of sauce served over rice with the sauteed vegetables and topped with garnish. You can also toss the vegetables up in the sauce to warm back through.
