Berry Sorghum Popsicles

Cool down with a treat that’s as refreshing as it is wholesome! These easy-to-make popsicles blend creamy coconut milk with naturally sweet sorghum syrup and juicy berries for a frozen snack the whole family will love. They’re dairy-free, antioxidant-rich and bursting with summer flavor — perfect for hot afternoons on the porch or backyard playdates.

Ingredients

  • 1 14-ounce can full fat coconut milk (refrigerated overnight or for a few hours)
  • 3 tablespoons sorghum syrup or to taste
  • 1 ½ cups blueberries, divided
  • 1 cup sliced strawberries or berries of choice

Directions

  1. Add the coconut milk, sorghum syrup, blueberries and strawberries to a blender and mix until well blended.
  2. Pour the mixture into the popsicle molds, filling them nearly all the way full.
  3. Fill the remainder of the popsicle molds with blueberries until the molds are almost full. Add the popsicle sticks, cover and place in the freezer for at least 6 hours or until completely frozen.
