Berry Sorghum Popsicles
Cool down with a treat that’s as refreshing as it is wholesome! These easy-to-make popsicles blend creamy coconut milk with naturally sweet sorghum syrup and juicy berries for a frozen snack the whole family will love. They’re dairy-free, antioxidant-rich and bursting with summer flavor — perfect for hot afternoons on the porch or backyard playdates.
Ingredients
- 1 14-ounce can full fat coconut milk (refrigerated overnight or for a few hours)
- 3 tablespoons sorghum syrup or to taste
- 1 ½ cups blueberries, divided
- 1 cup sliced strawberries or berries of choice
Directions
- Add the coconut milk, sorghum syrup, blueberries and strawberries to a blender and mix until well blended.
- Pour the mixture into the popsicle molds, filling them nearly all the way full.
- Fill the remainder of the popsicle molds with blueberries until the molds are almost full. Add the popsicle sticks, cover and place in the freezer for at least 6 hours or until completely frozen.
