Microwave Bread & Butter Pickles

With summer in full swing, your garden is (hopefully!) in full bloom. Wondering what to do with your bountiful cucumber harvest? We’ve got you covered with this easy pickle recipe.

On a specialized diet? This recipe works well for folks following a plant-based (vegetarian), vegan, low-fat, Mediterranean or DASH diet — and, of course, omnivores!


  • 4 cucumbers, sliced 
  • 2-4 onions, sliced 
  • 1 cup vinegar 
  • 1-2 cups sugar 
  • 1 teaspoon salt 
  • 1 teaspoon turmeric 
  • 1 teaspoon mustard seed 
  • ½ teaspoon celery seed


  1. Slice cucumbers into four slices each, lengthwise, or cut into ¼ inch chips. Slice the onions. Put in large microwave safe bowl. 
  2. In a separate bowl combine vinegar, sugar, salt, turmeric, mustard seed and celery seed. 
  3. Pour vinegar mixture over the cucumbers and onions. 
  4. Microwave uncovered for 5 minutes, stir and microwave for an additional 5 minutes. 
  5. Chill pickles and enjoy!
